Our 8.5" Chef model is inspired by the legendary cutlery of Japan, featuring a thin, hard, high-performance blade and our full-tang interpretation of the classic wa handle that features simple, straight lines and a slight taper from back to front. The blade steel is AEB-L Swedish stainless heat-treated to 61 Rockwell hardness w/ cryogenic treatment. The blades are 2” high at the heel, .10” thick with a full distal taper to the tip and a very thin .010” behind the edge.
